Chef Flavio Costa – Ristorante 21.9<i class='michelin-red-star'></i>

Flavio Costa describes his cuisine as warm, modern, instinctive, straightforward, and immediate. Each dish is born from a clear and direct idea, built around three main ingredients, rarely more, to highlight the purity and identity of each element. Freshness, lightness, and impact are the key words that guide his culinary philosophy.

Originally from Liguria, the chef brings with him the flavors of his homeland: the sea, aromatic herbs, extra virgin olive oil, and the intense scents of the Mediterranean landscape. But his cuisine goes beyond coastal tradition: alongside seafood dishes, he also presents game-based creations, interpreted with elegance and enriched by refined techniques, the result of a long and passionate career.

Over the years, Flavio Costa has built a solid and coherent path that led him to earn a Michelin Star in 2003, a recognition that confirmed his personal style and his ability to combine territory and creativity. His professional experiences, developed in high-level contexts, have allowed him to refine a culinary language that is essential yet profound, where every dish tells a story made of memory, technique, and instinct.

Today, his cuisine continues to evolve, maintaining a strong connection to his Ligurian and Piedmontese roots, while remaining open to new influences and inspirations.
