Chef Antonio Ziantoni – Zia Restaurant<i class='michelin-red-star'></i>

Antonio Ziantoni, born in 1986 and originally from Vicovaro, a town between Rome and Abruzzo, began his culinary journey after studying at a hospitality institute and training at ALMA. He then traveled the world—North Africa, China, Australia, followed by France, where he worked with the renowned Georges Blanc, and London, where he trained under Gordon Ramsay, learning the utmost discipline in the kitchen. Upon returning to Italy, he joined Il Pagliaccio under Anthony Genovese, further refining his technique and sensitivity.

Since 2018, he has been the Executive Chef and founder of ZIA, a restaurant in the heart of Trastevere, Rome, which earned a Michelin Star in 2021. His cuisine reflects a rich and multifaceted international journey, culminating in a personal style defined by profound essentiality and essential depth.

ZIA is a place where Italian tradition meets contemporary sensibility: the menu changes frequently, guided by the seasons and the chef’s inspiration. Even the most exotic ingredients are “Romanized,” seamlessly integrated into a context that mirrors the cultural richness of the capital.

The Hall is dedicated to the Alba writer Beppe Fenoglio (1922 - 1963), author among others of the novels Il Partigiano Johnny, Una questione privata, Primavera di bellezza. In the splendid monumental building of the Maddalena courtyard, the centre of Alba's cultural life, two large works by Gallizio face each other on the walls of the conference room dedicated to Beppe Fenoglio, set up during the Truffle Fair to host the Cooking Show.
