
Born in 1985 in Vallese di Oppeano, in the province of Verona, Giacomo Sacchetto began his culinary journey in Verona before moving to London. There, he spent two and a half years honing his skills at Toto’s, under the guidance of Chef Paolo Simioni, and later at Foliage, the restaurant of the Mandarin Oriental Hyde Park Hotel.
Upon returning to Italy, he joined the team at the three-Michelin-starred St. Hubertus, led by Chef Norbert Niederkofler, where he spent three years gaining experience in every kitchen station, from appetizers to pastry. During this time, he fully embraced the philosophy of Cook the Mountain, learning about sustainability and biodiversity in mountain cuisine.
Sacchetto then had the opportunity to work with another icon of Italian gastronomy, Giancarlo Perbellini, in Isola Rizza, establishing a strong professional bond. After this long Veronese chapter, he returned to work with Niederkofler as sous chef for about three years. In the following years, he continued his journey at Locanda Margon with Alfio Ghezzi, Le Calandre with the Alajmo family, and Berton in Milan.
When Casa Perbellini reopened, Sacchetto returned as sous chef, a role he held for four years. He then decided to embark on a new project: La Cru, an intimate gourmet restaurant with just five tables at the time. Despite the challenges of the pandemic, La Cru earned a Michelin Star in October 2020, followed by a Green Star in 2021.
In May 2023, Sacchetto returned to Verona to begin a new adventure with Iris Ristorante. His meeting with entrepreneur Bruno Soave sparked an immediate and fruitful collaboration. The restaurant opened in November 2023, was listed in the Michelin Guide within five months, and in November 2024, was awarded one Michelin Star.

The Cooking Shows offer a unique opportunity to experience haute cuisine up close, thanks to the presence of talented chefs who present original and refined dishes, each reflecting their own personal culinary vision. In a warm and engaging atmosphere, guests will enjoy a creation specially prepared for the event, paired with a glass of Alta Langa DOCG, carefully selected to enhance the overall tasting experience.
The event lasts approximately an hour and a half. To ensure the quality and organization of the experience, no changes to the menu can be made in case of allergies, intolerances, or specific dietary requirements.
Please note that Alba White Truffle shavings are not included, but may be added to the dish based on the daily quotation from the Truffle Exchange.
