The distinctive element—and at the same time, the guiding principle—of Chef Trovato’s work is the ability to make his territory recognizable in every dish, enhancing the raw ingredients and bringing out their intrinsic flavor. His culinary research, rooted in his Sicilian origins but shaped by his life in Tuscany, is a continuous journey aimed at celebrating the land that welcomed him as a child.
“I believe we must speak through the territory, and without constant research into its excellence, this profession loses much of its meaning.”

For over forty years, this belief has driven him to support those he fondly calls the “Artisans of Taste”, ensuring they receive the recognition they deserve.
“To meet the expectations of international guests, I once worked with non-local ingredients, but I’ve long since moved away from that model. Today, I’m proud to say that 80% of our ingredients are local, and the remaining 20% come from within Italy.”

His beautiful collaborations with Laura PeriSimone FracassiPoggio SorbelloCavolo a MerendaSant’Ulivieri farm, and many others allow the chef and his team to work with top-quality ingredients, with a strong focus on sustainability and authenticity throughout the process.

This philosophy earned him a significant recognition in 2021, when Chef Trovato was named an Ambassador by Slow Food and Relais & Châteaux for helping save the Valdarno Chicken, a symbol of Chianti, from extinction. Thanks also to the tireless work of Laura Peri, the breed was added to the Ark of Taste, a catalog of endangered food biodiversity.

In addition to cultivating a deep love for hospitality and ingredient research, the Trovato brothers have always shown a strong passion for architecture and the art of beauty. Every morning, the Chef personally arranges fresh flowers and sets up the dining room with care and creativity.

This artistic flair is also reflected in his dishes, which he loves to describe as “architecture to be savored.”

The Hall is dedicated to the Alba writer Beppe Fenoglio (1922 - 1963), author among others of the novels Il Partigiano Johnny, Una questione privata, Primavera di bellezza. In the splendid monumental building of the Maddalena courtyard, the centre of Alba's cultural life, two large works by Gallizio face each other on the walls of the conference room dedicated to Beppe Fenoglio, set up during the Truffle Fair to host the Cooking Show.
