THE CHEF
Gaetano Trovato, a chef of Sicilian origin and Tuscan by adoption, has been pursuing a cuisine deeply rooted in the local territory for over forty years. His goal is to highlight the authentic flavor of local ingredients, giving value to the “Artisans of Taste” with whom he collaborates. Today, 80% of the ingredients he uses come from the Tuscan region, with the remainder sourced exclusively from other parts of Italy.
In 2021, he was named a Slow Food and Relais & Châteaux Ambassador for his efforts in preserving the Valdarno Chicken, a symbol of the Chianti region, now included in the Ark of Taste. His cuisine, both essential and refined, is a true “architecture to be consumed”, the result of ongoing research that balances aesthetics, sustainability, and identity.
