Chef Alessandro Rossi – Gabbiano 3.0<i class='michelin-red-star'></i>

Born on April 20, 1991, in Chiusi, in the province of Siena, he grew up with a clear goal: to become a chef. After studying hospitality at the renowned Pellegrino Artusi Institute in Chianciano Terme (SI), he immediately began working in the field. His first experience was with Filippo Germasi at Ristorante Zafferano in Città della Pieve (PG), where he deepened his knowledge of Umbrian and Tuscan culinary traditions. He then worked with Stefano Ciavatti, a “genius and maverick” of seafood cuisine.
After a brief experience with Alessandro Dal Degan in Asiago, he felt the call to return to his homeland. He became the chef at Ristorante Leggenda dei Frati and a partner of Filippo Saporito, first in San Giovanni d’Asso (SI) and later at Villa Bardini, in the heart of Florence. There, he learned to understand Tuscan ingredients in every detail and to transform them into stories on the plate—conveying emotions, memories, and the cultural richness of the region.
His talent was confirmed in 2016, when he earned a Michelin Star at Villa Selvato in Roncade (TV), at just 25 years old. In June 2020, Chef Rossi arrived in Marina di Grosseto to lead Ristorante Gabbiano 3.0. With its promising recent history and beautiful view of the Grosseto harbor, the restaurant became the perfect stage for him to reaffirm his talent—once again earning and maintaining the Michelin Star.

The Hall is dedicated to the Alba writer Beppe Fenoglio (1922 - 1963), author among others of the novels Il Partigiano Johnny, Una questione privata, Primavera di bellezza. In the splendid monumental building of the Maddalena courtyard, the centre of Alba's cultural life, two large works by Gallizio face each other on the walls of the conference room dedicated to Beppe Fenoglio, set up during the Truffle Fair to host the Cooking Show.
