Inside the charming Castle of Roddi, one of the most fascinating cooking schools in Italy offers theoretical and practical courses dedicated to the culinary traditions of the Langhe, Monferrato, and Roero regions, as well as iconic dishes created by renowned chefs. All of this in a truly unique setting.

The school features 7 modern stainless steel workstations, fully equipped with all the necessary kitchen tools. Participants are actively involved in the preparation of the dishes and will have the opportunity to taste their creations, accompanied by a glass of local wine.

The 7 workstations can be used individually or in pairs.
Alba White Truffle shavings are not included but can be added to the dish based on the daily quotation from the Truffle Exchange.
The course has limited availability, with a maximum of 14 participants.
The workstations are fully equipped for both the theoretical and practical parts of the lessons.

The event is simultaneously translated into English.


THE CHEF

Pasquale Laera, originally from Puglia and now deeply rooted in Piedmont, is the chef-owner of Borgo Sant’Anna in Monforte d’Alba, a Michelin-starred restaurant in the heart of the Langhe. His cuisine blends rural tradition with contemporary vision, earning him his first Michelin Star in 2014 at La Rei (Boscareto Resort), and another in 2020 with the opening of Borgo Sant’Anna.

His culinary journey includes training at ALMA, mentorship under Antonino Cannavacciuolo as sous-chef, and international experiences in Japan, Copenhagen, and Mexico, which have shaped his creative and technical approach. His dishes reflect a balance of memory and innovation, using local ingredients with precision and personality.

In 2022, he launched a second project: Lostu, a playful osteria just steps from Borgo Sant’Anna, inspired by the traditional piola of Piedmont. While Borgo Sant’Anna showcases his avant-garde side, Lostu celebrates authentic, rustic flavors, rooted in the region’s culinary heritage.

In the superb setting of the Castle of Roddi, the so called "Cucina della Comunità" (Community Kitchen) is presented: a symbolic place that welcomes chefs, excellent raw materials and producers. The pertinence of the Castle of Roddi becomes a venue where the Langhe, Monferrato and Roero areas interact with the world, offering an experience of contamination between history, culture, art, enogastronomy. In the "Community Kitchen", cooking classes led by national and international chefs will be held. and dinners with starred chefs will be organised byinvolving producers of excellent raw materials that will be cooked and narrated by the protagonists.
