
Davide Oldani is considered the creator of “cucina pop”, a concept that combines high quality and accessibility, revolutionizing the way fine dining interacts with the public. His vision is based on the belief that excellence should not be reserved for a few, but can—and should—be shared, while maintaining rigor, creativity, and respect for ingredients.
In 2003, he opened his restaurant, D’O, in Cornaredo, just outside Milan, in his hometown. From the very beginning, the restaurant stood out for its innovative approach to dining: meticulously crafted dishes, seasonal ingredients, and attentive yet informal service. After just one year, the most prestigious Italian food guides ranked him among the great names of contemporary cuisine.
Before founding D’O, Oldani gained invaluable experience working alongside some of the world’s greatest culinary masters: Gualtiero Marchesi, the father of modern Italian cuisine; Albert Roux in London; Alain Ducasse in Monte Carlo; and Pierre Hermé, renowned for his avant-garde pastry. These international experiences helped shape a gastronomic vision that is refined, structured, and deeply personal.
In November 2013, Oldani was invited to Harvard to share his entrepreneurial journey. The university’s economists analyzed his organizational model, recognizing its effectiveness and adaptability beyond the restaurant industry. His approach—based on efficiency, sustainability, and team empowerment—has since become a case study.
Today, Davide Oldani is not only a Michelin-starred chef, but also an entrepreneur, author, and ambassador of a new way of interpreting cuisine: inclusive, ethical, and contemporary.
Ristorante D’O – Cornaredo
The Cooking Shows offer a unique opportunity to experience haute cuisine up close, thanks to the presence of talented chefs who present original and refined dishes that reflect their personal gastronomic vision.
The experience includes:
- The dish prepared by the chef
- A glass of Alta Langa DOCG
- S.Bernardo mineral water
- A 100g mini Panettone by Galup
- Tartufo Regale, an exclusive artisanal dessert that faithfully replicates the shape and color of the famous Alba Truffle created by Michelin-starred chef Ugo Alciati.
The experience lasts approximately one and a half hours. To ensure the quality and organization of the event, no menu changes are available in case of allergies, intolerances, or specific dietary requirements.
Please note that Alba White Truffle shavings are not included, but may be added to the dish based on the daily quotation from the Stock Market.
Children who wish to take part in the tasting must have a valid ticket. If children will be present in the room without participating in the tasting, please notify us by email at info@fieradeltartufo.org at least 72 hours before the event, so that a seat can be arranged next to their parents.
