Gourmet Sunset: A Fine Aperitif Experience by chef Stefano Sforza – Ristorante Opera

THE CHEF

Staying true to the restaurant’s philosophy, Chef Stefano Sforza, born in 1986, offers a cuisine that is precise, clean in flavor, and clearly defined in taste.
Without unnecessary embellishments—honest and pure—his approach follows the principle of “removing rather than adding,” as taught by the great Gualtiero Marchesi. Adding an extra ingredient to create unnecessary complexity is something anyone can do; but leaving only well-thought-out flavors on the plate is a skill mastered by few.
Stefano’s cuisine is rooted in territorial identity, innovation, and substance, with a menu that evolves with the seasonality of ingredients.
From his mentors—Pier Bussetti to Alain Ducasse—he learned discipline, respect, and rigor, even before learning to cook. The foundations, before the foundations.
After more than 15 years of experience—at Bellevue in CogneDel Cambio in TurinTrussardi alla Scala in Milan, and three years at Turin Palace—he embraced the Cometto family’s project and became Executive Chef at Opera.

In addition to the à la carte offering, there are two tasting menus:

  • One vegetarian, where Stefano showcases his passion for vegetables, playing with textures and cooking techniques
  • One “Opera” menu, a creative journey guided by the chef, giving full expression to his inspiration and the essence of the restaurant.

  • A 100g mini Panettone by Galup
  • Tartufo Regale, an exclusive artisanal dessert that faithfully replicates the shape and color of the famous Alba Truffle created by Michelin-starred chef Ugo Alciati.

The Hall is dedicated to the Alba writer Beppe Fenoglio (1922 - 1963), author among others of the novels Il Partigiano Johnny, Una questione privata, Primavera di bellezza. In the splendid monumental building of the Maddalena courtyard, the centre of Alba's cultural life, two large works by Gallizio face each other on the walls of the conference room dedicated to Beppe Fenoglio, set up during the Truffle Fair to host the Cooking Show.
