An outstanding chef performs a refined cooking show, preparing live two small gastronomic creations designed to accompany a glass of Alta Langa DOCG and an original cocktail based on Vermouth di Torino and Alta Langa DOCG.

THE CHEF

Francesco Marchese, born in 1990 and originally from Veneto, built his culinary journey between Italy and France, working in top-tier kitchens such as those of Georges BlancMarc Veyrat, and Yannick Alléno.
After years of training and growth, he arrived at the Réva Resort in Monforte d’Alba, where he now leads the FRE restaurant, awarded a Michelin Star in 2020.
Here, Francesco expresses a refined and personal cuisine that blends Italian tradition with French technique, with a special focus on high-quality ingredients and the creative use of sauces and extractions.
His menu tells the story of the Langhe region with elegance and modern flair, offering a gastronomic experience immersed in a breathtaking vineyard landscape.
FRE is now a benchmark for haute cuisine in Piedmont, thanks to the chef’s vision and sensitivity.

The Hall is dedicated to the Alba writer Beppe Fenoglio (1922 - 1963), author among others of the novels Il Partigiano Johnny, Una questione privata, Primavera di bellezza. In the splendid monumental building of the Maddalena courtyard, the centre of Alba's cultural life, two large works by Gallizio face each other on the walls of the conference room dedicated to Beppe Fenoglio, set up during the Truffle Fair to host the Cooking Show.
