Inside the charming Castle of Roddi, one of the most fascinating cooking schools in Italy offers theoretical and practical courses dedicated to the culinary traditions of the Langhe, Monferrato, and Roero regions, as well as iconic dishes created by renowned chefs. All of this in a truly unique setting.

The school features 7 modern stainless steel workstations, fully equipped with all the necessary kitchen tools. Participants are actively involved in the preparation of the dishes and will have the opportunity to taste their creations, accompanied by a glass of local wine.

The 7 workstations can be used individually or in pairs.
Alba White Truffle shavings are not included but can be added to the dish based on the daily quotation from the Truffle Exchange.
The course has limited availability, with a maximum of 14 participants.
The workstations are fully equipped for both the theoretical and practical parts of the lessons.

The event is simultaneously translated into English.


THE CHEF

Matteo Milandri discovered his passion for cooking at a very young age, driven by a deep love for his homeland and a natural curiosity for food and its transformations. Growing up among the aromas and flavors of Romagna, he began dreaming of becoming a chef as a child.

After graduating from the Pellegrino Artusi Hospitality School in Forlimpopoli, he embarked on a training journey across Italy and abroad, working alongside renowned culinary masters. Each experience helped shape a solid culinary vision, defined by ambition and practicality, but also by creativity and a strong focus on local ingredients, in perfect harmony with the teachings of Pellegrino Artusi.

Today, Matteo is the head of the Cooking School at Casa Artusi in Forlimpopoli, where he coordinates and develops a wide range of activities:

  • Cooking classes for enthusiasts, tourists, and professionals,
  • Menu design for events and institutional dinners in Italy and abroad,
  • Gastronomic experiences that celebrate Italian culinary culture through Artusi’s legacy

Casa Artusi

Casa Artusi is the first cultural center dedicated to Italian home cooking. It is located in Forlimpopoli, Romagna, the hometown of Pellegrino Artusi, a gastronome and author of the manual “La Scienza in cucina e l’Arte di mangiar bene”, also simply known by the author’s name, “L’Artusi.” The book, which has become a landmark in the history of Italian cuisine, contributes to building the national gastronomic identity. It is not just a recipe book but a collection of stories and testimonies that tell the story of Italy at the table. Italians recognize Artusi as a piece of their history, and when they travel abroad, they take a copy of the book in their suitcase, allowing it to be translated into over 11 languages today.

Casa Artusi regularly welcomes curious visitors, food enthusiasts, scholars, and food professionals who can experience domestic culinary culture. The center includes a gastronomic library, Pellegrino Artusi’s study and archive, a museum space, event venues, a cooking school, and a restaurant. These diverse aspects create the vibrant and ever-evolving environment of Casa Artusi. The cooking school offers scheduled courses, meetings with producers, private lessons, tourist experiences, and team-building activities, all emphasizing simple, tasteful cooking in line with Pellegrino Artusi’s values.

In the superb setting of the Castle of Roddi, the so called "Cucina della Comunità" (Community Kitchen) is presented: a symbolic place that welcomes chefs, excellent raw materials and producers. The pertinence of the Castle of Roddi becomes a venue where the Langhe, Monferrato and Roero areas interact with the world, offering an experience of contamination between history, culture, art, enogastronomy. In the "Community Kitchen", cooking classes led by national and international chefs will be held. and dinners with starred chefs will be organised byinvolving producers of excellent raw materials that will be cooked and narrated by the protagonists.
