Chef Michelangelo Mammoliti – La Rei Natura<i class='michelin-red-star'></i><i class='michelin-red-star'></i>, Il Boscareto Resort & SPA

Michelangelo Mammoliti, born in 1985 in Giaveno and raised in Almese, is currently the Executive Chef of La Rei Natura, the fine dining restaurant at Boscareto Resort & Spa in Serralunga d’Alba, where he earned two Michelin Stars in 2023. His cuisine, deeply rooted in nature and memory, reflects an international journey and a personal vision that blends precision, emotion, and innovation.

After early experiences in Italy, including working with Gualtiero Marchesi and Stefano Baiocco, Mammoliti moved to France, where he trained under culinary legends such as Alain Ducasse, Pierre Gagnaire, Yannick Alléno, and Marc Meneau. His time in France taught him discipline and excellence, while his collaboration with Frédéric Lalos, one of France’s top bakers, refined his skills in boulangerie.

Returning to Italy in 2014, he quickly gained recognition, earning his first Michelin Star in 2017 and a second in 2019. In 2021, he was named Chef of the Year by Identità Golose and included in the The Best Chef Awards.

Today, at La Rei Natura, Mammoliti offers an immersive gastronomic experience where every detail—from the ambiance to the plating—expresses his philosophy: a cuisine that speaks the language of nature, crafted with personally cultivated ingredients, refined techniques, and a deep connection to the Langhe region.

The Hall is dedicated to the Alba writer Beppe Fenoglio (1922 - 1963), author among others of the novels Il Partigiano Johnny, Una questione privata, Primavera di bellezza. In the splendid monumental building of the Maddalena courtyard, the centre of Alba's cultural life, two large works by Gallizio face each other on the walls of the conference room dedicated to Beppe Fenoglio, set up during the Truffle Fair to host the Cooking Show.
