With the main focus on the theme of sustainability, covering the three axes – environmental, social and economic – on Tuesday 29th and Wednesday 30th October 2024, the “Sostenibilit\u00e0 Incrociate” event was held with a completely new format involving chefs and artists and culminating in an unprecedented show staged by gastronomic curator Paolo Vizzari in collaboration with Samuel Romano and Diego Rossi.<\/p>\n
The two-day event began on Tuesday 29th October with a conference organised by the Centro Nazionale Studi Tartufo (National Truffle Study Centre) at the Palazzo Mostre e Congressi in Alba entitled: <\/em>FORZA E FRAGILITA\u2019 DELLA FILIERA DEL TUBER MAGNATUM PICO. Ricerche e buone pratiche, insieme alla Comunit\u00e0 della Cerca e cavatura del Tartufo in Italia.<\/em><\/strong><\/p>\n On 30th October, at the Church of San Domenico: FROM STONE TO SPOON<\/strong>, an art installation designed and conceived by Wooding Wild Food Lab to celebrate the evolution of food history. The work proposed, in a stimulating and visually appealing way, direct input on the concept of food waste, family farming, best nutritional practices, the valorisation of biodiversity, the minimisation of food waste and the improvement of animal welfare, and, through an informative path, the prevention of food disorders.<\/p>\n On the same day, at 10 a.m. in the Church of San Domenico, a panel discussion chaired by Paolo Vizzari<\/strong>, curator of gastronomy, with Valeria Mosca<\/strong> (cultural anthropologist, ethnobotanist, tour guide, researcher and environmentalist), the Cotarella Foundation<\/strong> (which promotes and supports lifestyles, habits, studies and treatments based on a healthy and balanced diet in harmony with nature) and the University of<\/strong> Gastronomic Sciences of Pollenzo <\/strong>wah held, which has launched an appeal for compulsory food education in schools.<\/p>\n On the evening of 30th October, at 8.30 p.m., at the Teatro Sociale G. Busca, Samuel Romano was joined by a chef friend, the flamboyant “vecio” (old man) of the Nuova Trattoria Italiana, Diego Rossi, who with his Trippa has shaken up the Milanese restaurant scene (and beyond), to share the stage and work at the same time, each dedicated to his own art while observing or listening to that of the other, inspiring each other as they tried to explore the points of contact between the two creative mechanisms.
