Inside the charming Castle of Roddi, one of the most fascinating cooking schools in Italy offers theoretical and practical courses dedicated to the culinary traditions of the Langhe, Monferrato, and Roero regions, as well as iconic dishes created by renowned chefs. All of this in a truly unique setting.<\/h2>\n

The school features 7 modern stainless steel workstations, fully equipped with all the necessary kitchen tools. Participants are actively involved in the preparation of the dishes and will have the opportunity to taste their creations, accompanied by a glass of local wine.<\/p>\n

The\u00a07 workstations<\/strong>\u00a0can be used individually or in pairs.
\nAlba White Truffle shavings<\/strong>\u00a0are not included but can be added to the dish based on the\u00a0daily quotation from the Truffle Exchange<\/strong>.
\nThe course has\u00a0limited availability<\/strong>, with a\u00a0maximum of 14 participants<\/strong>.
\nThe\u00a0workstations are fully equipped<\/strong>\u00a0for both the theoretical and practical parts of the lessons.<\/p>\n

THE CHEF<\/h3>\n

Pasquale Laera<\/strong>, originally from Puglia and now deeply rooted in Piedmont, is the chef-owner of\u00a0Borgo Sant\u2019Anna<\/strong>\u00a0in Monforte d\u2019Alba, a Michelin-starred restaurant in the heart of the Langhe. His cuisine blends\u00a0rural tradition with contemporary vision<\/strong>, earning him his\u00a0first Michelin Star in 2014<\/strong>\u00a0at La Rei (Boscareto Resort), and another in\u00a02020<\/strong>\u00a0with the opening of Borgo Sant\u2019Anna.<\/p>\n

His culinary journey includes training at\u00a0ALMA<\/strong>, mentorship under\u00a0Antonino Cannavacciuolo<\/strong>\u00a0as sous-chef, and international experiences in\u00a0Japan, Copenhagen, and Mexico<\/strong>, which have shaped his creative and technical approach. His dishes reflect a balance of\u00a0memory and innovation<\/strong>, using local ingredients with precision and personality.<\/p>\n

In\u00a02022<\/strong>, he launched a second project:\u00a0Lostu<\/strong>, a playful osteria just steps from Borgo Sant\u2019Anna, inspired by the traditional\u00a0piola<\/strong>\u00a0of Piedmont. While Borgo Sant\u2019Anna showcases his avant-garde side,\u00a0Lostu celebrates authentic, rustic flavors<\/strong>, rooted in the region\u2019s culinary heritage.<\/p>\n
