THE CHEF<\/strong><\/p>\n

Staying true to the restaurant\u2019s philosophy, Chef Stefano Sforza<\/strong>, born in 1986, offers a cuisine that is\u00a0precise, clean in flavor, and clearly defined in taste<\/strong>.
\nWithout unnecessary embellishments\u2014honest and pure<\/strong>\u2014his approach follows the principle of \u201cremoving rather than adding,\u201d as taught by the great\u00a0Gualtiero Marchesi<\/strong>. Adding an extra ingredient to create unnecessary complexity is something anyone can do; but leaving only well-thought-out flavors on the plate is a skill mastered by few.
\nStefano\u2019s cuisine is rooted in\u00a0territorial identity, innovation, and substance<\/strong>, with a menu that evolves with the\u00a0seasonality of ingredients<\/strong>.
\nFrom his mentors\u2014Pier Bussetti<\/strong>\u00a0to\u00a0Alain Ducasse<\/strong>\u2014he learned\u00a0discipline, respect, and rigor<\/strong>, even before learning to cook. The foundations, before the foundations.
\nAfter more than 15 years of experience\u2014at\u00a0Bellevue in Cogne<\/strong>,\u00a0Del Cambio in Turin<\/strong>,\u00a0Trussardi alla Scala in Milan<\/strong>, and three years at\u00a0Turin Palace<\/strong>\u2014he embraced the\u00a0Cometto family\u2019s project<\/strong>\u00a0and became\u00a0Executive Chef at Opera<\/strong>.<\/p>\n
