After studying hospitality at the renowned\u00a0<strong>Pellegrino Artusi Institute<\/strong>\u00a0in Chianciano Terme (SI), he immediately began working in the field. His first experience was with\u00a0<strong>Filippo Germasi<\/strong>\u00a0at\u00a0<strong>Ristorante Zafferano<\/strong>\u00a0in Citt\u00e0 della Pieve (PG), where he deepened his knowledge of Umbrian and Tuscan culinary traditions. He then worked with\u00a0<strong>Stefano Ciavatti<\/strong>, a \u201cgenius and maverick\u201d of seafood cuisine.<br \/>\nAfter a brief experience with\u00a0<strong>Alessandro Dal Degan<\/strong>\u00a0in Asiago, he felt the call to return to his homeland. He became the chef at\u00a0<strong>Ristorante Leggenda dei Frati<\/strong>\u00a0and a partner of\u00a0<strong>Filippo Saporito<\/strong>, first in\u00a0<strong>San Giovanni d\u2019Asso (SI)<\/strong>\u00a0and later at\u00a0<strong>Villa Bardini<\/strong>, in the heart of Florence. There, he learned to understand Tuscan ingredients in every detail and to transform them into stories on the plate\u2014conveying emotions, memories, and the cultural richness of the region.<br \/>\nHis talent was confirmed in\u00a0<strong>2016<\/strong>, when he earned a\u00a0<strong>Michelin Star<\/strong>\u00a0at\u00a0<strong>Villa Selvato<\/strong>\u00a0in Roncade (TV), at just 25 years old. In\u00a0<strong>June 2020<\/strong>, Chef Rossi arrived in\u00a0<strong>Marina di Grosseto<\/strong>\u00a0to lead\u00a0<strong>Ristorante Gabbiano 3.0<\/strong>.
